Instructions

  1. Prepare baking sheet: Line a baking sheet with parchment paper and set aside to allow the divinity candy to set properly after cooking.
  2. Cook sugar mixture: In a medium saucepan over medium heat, combine granulated sugar, light corn syrup, and water. Stir constantly and cook until the mixture reaches 260°F (hard ball stage) on a candy thermometer; this should take about 25 minutes.
  3. Beat egg whites: While the sugar mixture is nearing 260°F, beat the room temperature egg whites in a stand mixer fitted with a whisk attachment on high speed until stiff peaks form.
  4. Combine sugar and egg whites: With the mixer running on high, very slowly and carefully pour the hot sugar syrup into the beaten egg whites. Continue beating until the mixture becomes thick and holds its shape, approximately 6 to 8 minutes, scraping down the sides of the bowl as needed.
  5. Add flavor and nuts: Fold in the vanilla extract and finely chopped pecans gently with a spatula, distributing them evenly without deflating the mixture.
  6. Form candies: Lightly spray two spoons with nonstick cooking spray. Use one spoon to scoop the divinity mixture and the other to push spoonfuls onto the prepared parchment-lined baking sheet, forming small mounds.
