These easy herby lemon skewers are a flavorful and simple dish that is perfect for a quick meal or a summer barbecue. The combination of fresh herbs, zesty lemon, and tender chicken makes these skewers a crowd-pleaser.

Marinade:

  • ¼ cup olive oil
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 23 garlic cloves, crushed
  • 2 tsp fresh thyme
  • 2 tsp rosemary
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 tsp pepper

Chicken:

  • 4 large chicken breasts, skinless, boneless
  • Wooden skewers (soaked in boiling water for 30 minutes)

Instructions

  1. Combine all the ingredients for the marinade. In a bowl, mix the olive oil, lemon juice, lemon zest, crushed garlic, thyme, rosemary, oregano, salt, and pepper.
  2. Slice the chicken and marinate. Cut the chicken into bite-sized chunks and place them in a bowl. Pour the marinade over the chicken, cover, and marinate for at least 30 minutes in the fridge.
  3. Thread the chicken onto skewers. Skewer the marinated chicken onto soaked wooden skewers or metal skewers.
  4. Grill the skewers. Heat an outdoor grill or stovetop grill pan. Cook the skewers, turning every 3-5 minutes, until the chicken is cooked through and browned on all sides.
  5. Rest and serve. Remove from heat, let the skewers rest for 5 minutes, then serve.
