Instructions

  1. Prepare the skillet base: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add 1 pound of lean ground beef, 1 diced yellow onion, 1 diced red bell pepper, and 1 diced green bell pepper. Sauté until the beef is evenly browned and the vegetables become tender, stirring occasionally.
  2. Add seasoning and garlic: Stir in 2 cloves of minced garlic and 2 tablespoons of taco seasoning. Cook the mixture for 1 minute to release the flavors of the spices and garlic.
  3. Add tomatoes and beans: Pour in 1 (15-ounce) can of fire-roasted diced tomatoes and chiles along with 1 (15-ounce) can of drained and rinsed black beans. Stir everything together to combine all ingredients in the skillet.
  4. Incorporate rice: Mix in 1 ½ cups of cooked rice evenly into the skillet contents. Continue cooking the combined mixture for another 5 minutes to warm through and allow flavors to meld.
  5. Melt the cheese: Remove the skillet from the stovetop heat. Evenly spread 1 ½ cups of shredded Mexican four cheese blend over the top. Place the skillet under a broiler on HIGH for 2–3 minutes or until the cheese melts and bubbles.
