Ingredients

Scale

Dry Ingredients:

  • 250 g plain flour
  • A small pinch of salt
  • 1 tablespoon caster sugar

Wet Ingredients:

  • 3 large eggs
  • 1 tbsp sunflower, vegetable oil or melted butter
  • 500 ml milk
  • About 25g butter, for the pan

Instructions

  1. To make by hand: Place the flour and salt in a bowl, make a well, beat eggs and oil, pour into the well, add half of the milk, whisk until smooth. Add the remaining milk gradually and whisk until you have a smooth batter.
  2. Alternatively: Blend all ingredients in a blender until smooth.
  3. Allow the batter to rest for 30 minutes.
  4. Heat a non-stick pan, add butter, pour batter, cook until golden brown, then flip. Repeat until all batter is used.
  5. Pancakes are best eaten fresh or can be reheated in the oven or microwave.

Notes

  • The first pancake might not look perfect, but it’s still delicious!
  • Reheating pancakes in the microwave can make them slightly rubbery, so do it in short bursts.
