1 Tablespoon olive oil
2 Tablespoon butter
3/4 lb top sirloin cubes
Salt and pepper to taste
2 cups apple cider
1/2 cup beef broth
1 large onion, chopped
2 medium carrots, peeled and chopped
For the Mashed Potatoes:
6 large potatoes
1/4 cup milk
1/4 cup sour cream
1 cup sharp cheddar cheese, shredded
3 Tablespoons chives
Instructions
Preheat Oven: Preheat the oven to 375°F.
Cook Beef: In a pan over medium-high heat, melt butter with olive oil. Season beef with salt and pepper, then brown on all sides (6-8 minutes). Add chopped onion and carrots, cook for 4-5 minutes.
Add Ingredients: Sprinkle with flour, stir to coat, then cook for 1-2 minutes. Pour in apple cider and broth, bring to a boil.
Cook Stew: Transfer to an oven-safe pan, cover, and bake for 1 – 1 ½ hours.
Prepare Potatoes: Boil potatoes until tender, drain, then return to the pan. Mash with milk, sour cream, cheese, and chives.
Serve: Serve the apple cider stew over the mashed potatoes.
