  • 1 Tablespoon olive oil
  • 2 Tablespoon butter
  • 3/4 lb top sirloin cubes
  • Salt and pepper to taste
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion, chopped
  • 2 medium carrots, peeled and chopped

For the Mashed Potatoes:

  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese, shredded
  • 3 Tablespoons chives

Instructions

  1. Preheat Oven: Preheat the oven to 375°F.
  2. Cook Beef: In a pan over medium-high heat, melt butter with olive oil. Season beef with salt and pepper, then brown on all sides (6-8 minutes). Add chopped onion and carrots, cook for 4-5 minutes.
  3. Add Ingredients: Sprinkle with flour, stir to coat, then cook for 1-2 minutes. Pour in apple cider and broth, bring to a boil.
  4. Cook Stew: Transfer to an oven-safe pan, cover, and bake for 1 – 1 ½ hours.
  5. Prepare Potatoes: Boil potatoes until tender, drain, then return to the pan. Mash with milk, sour cream, cheese, and chives.
  6. Serve: Serve the apple cider stew over the mashed potatoes.
