Ingredients

Scale

For the Soup:

  • 2 lbs beef short ribs
  • 3 large yellow onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 6 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • Salt and pepper, to taste

For Topping:

  • 6 slices of baguette or crusty bread
  • 1 1/2 cups shredded Gruyère or Swiss cheese

Instructions

  1. Step 1: Sear the Beef Short Ribs – Heat the olive oil in a Dutch oven over medium-high heat. Season and sear the short ribs until browned. Remove and set aside.
  2. Step 2: Caramelize the Onions – Cook onions in butter until caramelized. Add garlic and cook briefly.
  3. Step 3: Build the Soup – Return ribs to pot, add broth, Worcestershire sauce, bay leaf, and thyme. Simmer until ribs are tender. Shred meat and return to pot.
  4. Step 4: Prepare the Topping – Toast baguette slices, top each bowl of soup with a slice, sprinkle with cheese, and broil until melted.
  5. Step 5: Serve and Enjoy – Garnish with fresh thyme and serve hot.

Notes

  • This soup can be made ahead of time and reheated just before serving.
  • For a deeper flavor, you can deglaze the pot with a splash of red wine after caramelizing the onions.
