For the Salad:

  • 1 cup long-grain wild rice
  • Kosher salt
  • 2 navel oranges (zest removed from one of the oranges)
  • 2 tablespoons olive oil
  • 2 tablespoons freshly squeezed orange juice
  • 2 tablespoons Vanilla & Date Balsamic Vinegar
  • 1/2 cup seedless green grapes (cut in half)
  • 1/2 cup walnuts (toasted)
  • 1/2 cup diced dried apricots
  • 2 tablespoons scallions (white and green parts, chopped)
  • 1/2 teaspoon freshly ground black pepper
  • 1 head of butter lettuce

Instructions

  1. Cook the Wild Rice: Place the wild rice in a medium pot with 4 cups of water and 2 teaspoons of salt. Bring to a boil, then simmer uncovered for 50 to 60 minutes until tender. Drain well and steam for 10 minutes.

  3. Let It Rest: Allow the salad to sit for 30 minutes to meld flavors. Adjust seasonings to taste and serve at room temperature.
