Base
- 8 tbsp unsalted butter
- 20 oz mini marshmallows (Jet-Puffed)
- 1½ tsp vanilla extract
- 1 tsp kosher salt
- 10 cups Fruity Pebbles cereal
- 2 cups mini marshmallows (reserved from the 20 oz)
Topping
- Prepare the pan: Spray a 13×9 inch pan with non-stick cooking spray, then line it with parchment paper. Lightly spray the parchment paper as well to prevent sticking.
- Melt butter and marshmallows: In a 6-quart pot over medium heat, melt the butter. Once melted, reduce heat to low and add 20 oz of mini marshmallows, stirring occasionally until fully melted and smooth.
- Add flavorings: Remove the pot from heat and stir in the vanilla extract and kosher salt to enhance the flavor.
- Mix in cereal: Fold the Fruity Pebbles cereal gently into the marshmallow mixture. Then, add the reserved 2 cups of mini marshmallows and fold them in carefully to maintain texture and prevent crushing the cereal.
- Press into pan: Transfer the cereal mixture into the prepared pan. Gently press it down evenly using the back of a wooden spoon lightly sprayed with non-stick spray to avoid sticking.
- Melt almond bark: In a microwave-safe bowl, melt the white almond bark in 30-second increments, stirring between each, until smooth and fully melted.
- Drizzle topping: Pour the melted almond bark into a Ziplock bag, cut a small corner off the bag, and drizzle it evenly over the top of the pressed Fruity Pebbles bars.
- Cool and set: Allow the treat to cool at room temperature for 1 hour so the almond bark topping can harden and bars can set firmly.
- Cut and serve: After cooling, cut the treats into squares and serve. Store any leftovers in an airtight container.
