Base

  • 8 tbsp unsalted butter
  • 20 oz mini marshmallows (Jet-Puffed)
  • 1½ tsp vanilla extract
  • 1 tsp kosher salt
  • 10 cups Fruity Pebbles cereal
  • 2 cups mini marshmallows (reserved from the 20 oz)

Topping

  • 8 oz white almond bark

Instructions

  1. Prepare the pan: Spray a 13×9 inch pan with non-stick cooking spray, then line it with parchment paper. Lightly spray the parchment paper as well to prevent sticking.
  2. Melt butter and marshmallows: In a 6-quart pot over medium heat, melt the butter. Once melted, reduce heat to low and add 20 oz of mini marshmallows, stirring occasionally until fully melted and smooth.
  3. Add flavorings: Remove the pot from heat and stir in the vanilla extract and kosher salt to enhance the flavor.
  4. Mix in cereal: Fold the Fruity Pebbles cereal gently into the marshmallow mixture. Then, add the reserved 2 cups of mini marshmallows and fold them in carefully to maintain texture and prevent crushing the cereal.
  5. Press into pan: Transfer the cereal mixture into the prepared pan. Gently press it down evenly using the back of a wooden spoon lightly sprayed with non-stick spray to avoid sticking.
  6. Melt almond bark: In a microwave-safe bowl, melt the white almond bark in 30-second increments, stirring between each, until smooth and fully melted.
  7. Drizzle topping: Pour the melted almond bark into a Ziplock bag, cut a small corner off the bag, and drizzle it evenly over the top of the pressed Fruity Pebbles bars.
  8. Cool and set: Allow the treat to cool at room temperature for 1 hour so the almond bark topping can harden and bars can set firmly.
  9. Cut and serve: After cooling, cut the treats into squares and serve. Store any leftovers in an airtight container.
