Wet Ingredients:

  • 1 tablespoon apple cider vinegar
  • ⅔ cup unsweetened almond milk (less 1 tablespoon)
  • 4 eggs
  • 1 cup sugar
  • 1 lemon (for zest & juice)
  • 2 teaspoons lemon extract
  • ½ cup avocado oil or refined coconut oil, melted

Glaze:

  • 1 cup powdered sugar
  • 12 tablespoons lemon juice

Instructions

  1. Preheat and Prepare: Preheat the oven to 350° F. Line a 9 x 4-inch loaf pan with parchment paper.
  2. Mix Dry Ingredients: In a medium bowl, combine gluten-free flour, cornstarch, baking powder, and salt. Set aside.
  3. Prepare ‘Buttermilk’: Mix apple cider vinegar with almond milk to make buttermilk. Set aside.
  4. Zest Lemon: Zest the lemon, ensuring to only get the yellow part. Set aside.
  5. Juice Lemon: Juice the lemon using a hand juicer. Set aside.
  6. Combine Wet Ingredients: In a large bowl, mix eggs, sugar, almond milk mixture, lemon zest, lemon juice, and lemon extract. Add avocado oil and combine. Mix in the flour mixture.
  7. Bake: Pour batter into the loaf pan and bake for 60-65 minutes. Test with a toothpick for doneness.
  8. Cool and Glaze: Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack. Mix powdered sugar and lemon juice for the glaze. Spread over the cooled loaf.
