Ingredients

  • 1½ cups all purpose gluten-free flour with xanthan gum (we used GFJules)
  • ¾ teaspoon kosher salt + extra for sprinkling in salted option
  • 2 teaspoons baking powder
  • 1 cup plain fat free Greek yogurt or dairy-free Greek yogurt (we used Fage brand)
  • ¼ cup baking soda (4 tablespoons)
  • 4½ cups water
  • ¾ cup granulated sugar
  • 1½ teaspoons ground cinnamon
  • 4 tablespoons melted butter or dairy-free butter

Instructions

  1. Step 1: Preheat the oven to 400 degrees F and line a baking sheet with parchment paper. Set aside.
  2. Step 2: Make the dough by combining the gluten-free flour, baking powder, and salt in a large bowl. Mix or whisk to combine. Add the yogurt and mix with a stand mixer or hand mixer for 2-3 minutes until the dough forms a ball and pulls away from the mixer.
  3. Step 3: Place the dough on a silicone pastry mat and with dry hands lightly dusted with flour, roll into a ball and knead about 10 times. Divide the dough into 4 equal pieces. Roll each piece into a ball, then shape each into a worm-like strip about 8-10 inches long. Cut each strip into 1-inch pieces using a pizza cutter or sharp knife and place them on the prepared baking sheet.
  4. Step 4: Prepare the baking soda bath by bringing the water and baking soda to a boil in a medium saucepan. Boil 4-6 pretzel bites at a time for 10 seconds, then use a slotted spoon to remove them. Let excess water drip off and place the bites back on the baking sheet. Repeat with remaining pieces.
  5. Step 5: If making salted pretzel bites, sprinkle coarse salt on them now while still wet. For cinnamon sugar bites, skip this step.
  6. Step 6: Bake the pretzel bites on the middle oven rack for 15 minutes until golden brown. Remove and let them rest for 5 minutes before serving.
  7. Step 7: For the cinnamon sugar option, combine the granulated sugar and ground cinnamon in a medium bowl. Melt the butter in a separate bowl.
  8. Step 8: Dip or brush the baked pretzel bites in melted butter, letting excess drip off, then toss them in the cinnamon sugar mixture until coated well.
  9. Step 9: Serve pretzel bites immediately for best texture and flavor.

Tips & Variations

  • For a dairy-free version, use a dairy-free Greek yogurt and dairy-free butter alternative.
  • Lightly dust your hands with gluten-free flour to prevent sticking while shaping the dough.
  • Try adding garlic powder or shredded cheese for a savory twist on the pretzel bites.

Storage

Salted pretzel bites can be stored in an airtight container overnight and reheated in the microwave or oven the next day. They also freeze well for up to 2 months; thaw and reheat before serving. For cinnamon sugar bites, freeze them before adding the topping and sprinkle the cinnamon sugar after thawing for best results.

How to Serve

Two white bowls sit on a white marbled surface, each filled with bite-sized square pastries. The top bowl contains golden brown pieces lightly sprinkled with coarse white salt, showing a soft and fluffy texture with a slightly crispy outside. The bottom bowl has similar-shaped pieces coated with a coarse, sandy brown sugar and cinnamon mix, giving them a rougher but still tender appearance. Both sets of pastries have a warm, baked look with visible variation in their smoky golden tones. Photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use regular flour instead of gluten-free flour?

Yes, you can substitute with regular all-purpose flour if you don’t need a gluten-free recipe. Adjustments may be needed for texture and liquid amounts.

How do I get the pretzel bites to have a chewy texture?

The baking soda bath is key to achieving a chewy, pretzel-like texture. Boiling the dough bites briefly helps develop that characteristic outer texture before baking.

Scale

Dough Ingredients

  • 1½ cups all purpose gluten-free flour with xanthan gum (we used GFJules)
  • ¾ teaspoon kosher salt + extra for sprinkling in salted option
  • 2 teaspoons baking powder
  • 1 cup plain fat free Greek yogurt or dairy-free Greek yogurt (we used Fage brand)

Baking Soda Bath

  • ¼ cup baking soda (4 tablespoons)
  • 4½ cups water

Toppings

  • Extra kosher salt, for sprinkling (optional, for salted version)
  • ¾ cup granulated sugar (for cinnamon sugar topping)
  • 1½ teaspoons ground cinnamon (for cinnamon sugar topping)
  • 4 tablespoons melted butter or dairy-free butter (for cinnamon sugar topping)

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees F and line a baking sheet with parchment paper to prepare for baking the pretzel bites.
  2. Make the Dough: In a large bowl, whisk together gluten-free flour, baking powder, and kosher salt. Add the Greek yogurt and mix using a stand or hand mixer for 2-3 minutes until the dough forms a cohesive ball that pulls away from the mixer.
  3. Shape Pretzel Bites: Transfer the dough to a silicone pastry mat. With lightly floured hands, knead the dough about 10 times, then divide into 4 equal pieces. Roll each piece into a ball, then roll each ball into a worm-like strip about 8 to 10 inches long. Use a pizza cutter or sharp knife to cut into 1-inch pieces and place them on the prepared baking sheet.
  4. Baking Soda Bath: Bring water and baking soda to a boil in a medium saucepan. Working in batches (4-6 bites), carefully drop the pieces into the boiling water for exactly 10 seconds. They will float to the surface when ready. Using a slotted spoon, remove the pretzel bites, let excess water drip off, and return to the baking sheet.
  5. Add Salt (Optional): If making salted pretzel bites, sprinkle coarse kosher salt on the pretzel bites while they are still wet from the baking soda bath.
  6. Bake: Place the baking sheet on the middle rack of the oven and bake for 15 minutes until the pretzel bites are golden brown. Remove from oven and let them sit for 5 minutes.
  7. Prepare Cinnamon Sugar Topping: In a medium bowl, combine granulated sugar and ground cinnamon. In a separate bowl, melt the butter or dairy-free butter.
  8. Coat Pretzel Bites: For a cinnamon sugar finish, dip or brush each baked pretzel bite with melted butter, allowing excess to drip off, and then toss in the cinnamon sugar mixture until fully coated.
  9. Serve: Enjoy the pretzel bites immediately for best texture and flavor.
  10. Storage: Salted pretzel bites can be stored in an airtight container overnight and reheated in the microwave or oven. They can also be frozen for up to 2 months; thaw and reheat before eating. For cinnamon sugar bites, freeze the bites before adding cinnamon sugar and apply the cinnamon sugar topping after thawing.

Notes

  • Using a silicone pastry mat helps in rolling and shaping the dough easily.
  • Make sure the baking soda bath is boiling before adding the pretzel bites to ensure a proper crust.
  • If opting for the cinnamon sugar topping, do not add salt after the baking soda bath.
  • For best texture, enjoy pretzel bites the same day they are baked.
  • Freeze cinnamon sugar pretzel bites before coating, then add the cinnamon sugar after reheating to maintain crispiness.
  • Use gluten-free flour with xanthan gum for the best dough elasticity and chewiness.
  • Dairy-free Greek yogurt and butter alternatives work well for a vegan or dairy-free version.
