Zucchini:

  • 2 medium zucchini, sliced (about 2 pounds)

Ground Beef Mixture:

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 pound lean ground beef
  • 2 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper
  • 1 28 ounce can diced tomatoes, drained
  • 2 cups shredded mozzarella cheese

Instructions

  1. Prepare Zucchini: Slice zucchini into 1/2″ rounds, salt, rinse, and pat dry.
  2. Cook Ground Beef Mixture: Sauté onions, garlic, and ground beef until browned. Add tomatoes, Italian seasoning, salt, and pepper.
  3. Assemble Casserole: Layer half of the beef mixture, zucchini slices, and mozzarella cheese in a baking dish. Repeat for second layer.
  4. Bake: Bake at 350°F for 20-25 minutes until cheese is melted and lightly browned.
  5. Rest and Serve: Allow casserole to rest for 10 minutes before serving.
