Ingredients

Scale

Primary Ingredients

  • 1 can (13.5 oz) coconut milk
  • 5 tablespoons cornstarch
  • 4 tablespoons sugar
  • 1/2 cup water

Instructions

  1. Prepare the Cornstarch Mixture: In a small bowl, mix the cornstarch with water until the cornstarch is completely dissolved, ensuring there are no lumps. Set this mixture aside for later use.
  2. Heat Coconut Milk and Sugar: In a small saucepan over medium heat, combine the entire can of coconut milk and sugar. Whisk continuously to blend the sugar and coconut milk well and heat the mixture until it almost reaches a boil.
  3. Add Cornstarch Mixture: Slowly pour the dissolved cornstarch and water mixture into the hot coconut milk mixture while whisking continuously to prevent lumps from forming.
  4. Cook Until Thickened: Lower the heat to low and keep cooking the mixture for 10 to 15 minutes. Whisk frequently to avoid sticking or burning. The haupia is ready when the mixture thickens significantly, becoming almost gluey, and it starts to pull away from the sides of the saucepan.
  5. Set the Pudding: Pour the thickened haupia into an 8×8 inch greased or parchment-lined pan. Let it cool at room temperature for about 15 minutes, then transfer it to the refrigerator for 1 to 2 hours until it sets firmly.
  6. Serve: Once set, cut the haupia into squares and serve chilled. Enjoy this creamy, tropical coconut pudding as a delightful dessert.

Notes

  • Use full-fat coconut milk for the best creamy texture and rich coconut flavor.
  • Whisking continuously is crucial to prevent lumps and burning when cooking the haupia.
  • For a firmer haupia, allow it to chill longer in the refrigerator.
  • This pudding is naturally gluten-free and vegetarian.
  • Leftover haupia can be stored in the refrigerator in an airtight container for up to 3 days.
