Healthy Chicken Caesar Salad with Fries Recipe

Crispy Chicken:
- 125g chicken breast (cut & pounded into a thin schnitzel)
- 1 tbsp Greek yogurt (20-25g)
- 1/2 tsp dijon mustard (2-3g)
- 1/4 tsp minced garlic (or garlic powder)
- dash of paprika, mixed herbs, salt and pepper
- 13–15g panko breadcrumbs
- 5g parmesan (grated)
- dash of garlic powder, paprika, salt and pepper
Healthy Fries:
- 225–250g white potato (peeled and chopped into fries)
- 1/2 tsp olive oil (2-3g)
- Seasonings to taste (e.g peri peri salt seasoning or paprika, garlic, salt and pepper)
Caesar Salad Dressing:
- 10g light mayonnaise (about 1/2 tbsp)
- 25g greek yogurt (heaped tbsp)
- 1/4 tsp minced garlic (or garlic powder)
- 1/2 tsp dijon mustard
- 1/4 tsp anchovy paste or anchovies blended to create a paste
- 1 tbsp apple cider vinegar (or red wine/white vinegar)
- 1/4 tsp Worcestershire sauce
- 1/4–1/2 Lemon (juiced)
- 3–5g parmesan (grated)
- salt & pepper (to taste)
- 1/2–1 head cos, romaine or iceberg lettuce
Hot Honey (optional):
- 1 tsp honey (7g)
- 2 tsp hot sauce (10g)
- dash of chilli flakes
- Crispy Chicken: Marinate the chicken breast in Greek yogurt, lemon juice, Dijon mustard, minced garlic, paprika, salt, and pepper for 30 minutes to 1 hour.
- Dip the marinated chicken breast into the seasoned panko breadcrumb mixture.
- Spray with olive oil spray and air fry at 200°C for 15-18 minutes, flipping halfway. Alternatively, bake at 200°C for 20-25 minutes, flipping halfway.
- Healthy Fries: Rinse the starch off the potato until the water runs clear.
- Optional but recommended: Soak the fries in cold water with a dash of baking soda for 30 minutes to 1 hour.
- Pat dry and add to a bowl with olive oil and seasonings, mixing well.
- Air fry at 200°C for 15-20 minutes, shaking halfway.
- Caesar Salad: Mix the salad dressing ingredients until combined and to desired thickness and taste.
- Add the chopped lettuce into the bowl and mix well.
- Hot Honey (optional): Mix the honey, hot sauce, and chili flakes together.
- Serve: Serve the Caesar salad with the crispy chicken and fries, and top the chicken with some hot honey.
- Top with freshly grated parmesan and enjoy!
Notes
- For extra crunch, you can double coat the chicken with breadcrumbs.
- Adjust the seasonings in the fries to suit your taste preferences.
- Feel free to customize the salad with additional toppings like cherry tomatoes or croutons.
