  • 1 cup plain Greek yogurt or chilled coconut cream with 1 tablespoon honey

Instructions

  1. Preheat and prepare pan: Preheat your oven to 350°F (175°C). Line a 7-inch round cake tin with parchment paper to prevent sticking.
  2. Mix dry ingredients: In a small bowl, sift together the chickpea flour, ground cinnamon, baking powder, and baking soda to combine thoroughly and remove lumps.
  3. Combine wet ingredients: In a separate bowl, whisk together the milk, coconut oil (or olive oil), and apple cider vinegar until well incorporated.
  4. Make the batter: Pour the wet mixture into the dry ingredients bowl. Gently fold in 1/3 cup of mashed strawberries and honey if using, mixing just until combined to avoid overmixing.
  5. Bake the cake: Pour the batter into the prepared cake tin and bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and chill: Allow the cake to cool completely, then place it in the refrigerator for 30 minutes to set firmly.
