Instructions

  1. Preheat Oven: Set your oven to 425°F (220°C) to get it ready for roasting the potatoes evenly and achieving a crispy texture.
  2. Toss Ingredients: In a large bowl, combine the quartered baby potatoes with finely chopped garlic, extra-virgin olive oil, chopped fresh rosemary, parsley, and thyme. Season the mixture generously with kosher salt, freshly ground black pepper, and a pinch of crushed red pepper flakes for a hint of heat.
