Ingredients

Scale

For the Sauce

  • 3/4 cup chicken bone broth
  • 1/2 cup heavy cream
  • 1/4 cup whole milk cottage cheese
  • 2 tablespoons chopped sun-dried tomatoes (from about 4 tomato halves)
  • 2 tablespoons finely grated Parmesan, plus more for serving
  • 1 teaspoon tomato paste
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

For the Chicken

  • 4 (6-oz.) boneless, skinless chicken cutlets
  • 2 tablespoons all-purpose flour
  • 1 teaspoon Italian seasoning
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon unsalted butter
  • 2 garlic cloves, finely chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 1/2 cup fresh basil leaves, torn, plus more for serving

Instructions

  1. Prepare the sauce: In a blender, combine the chicken bone broth, heavy cream, whole milk cottage cheese, chopped sun-dried tomatoes, 2 tablespoons of finely grated Parmesan cheese, and tomato paste. Puree the mixture until smooth. Season the sauce with kosher salt and freshly ground black pepper to taste.
  2. Season the chicken: Pat the chicken cutlets dry with paper towels. Season both sides well with kosher salt and freshly ground black pepper. Sprinkle the chicken evenly with the all-purpose flour and Italian seasoning, then press gently with your fingers so the seasoning adheres well to the surface.
  3. Sear the chicken: Heat the extra-virgin olive oil in a large skillet over medium-high heat. Once hot, add the chicken cutlets, cooking in batches if necessary to avoid overcrowding. Cook the chicken for about 5 minutes on each side, or until both sides are nicely browned. Transfer the seared chicken to a plate and let it rest for 5 minutes.
  4. Sauté garlic and spices: Reduce the heat to medium-low, and in the same skillet, melt the unsalted butter. Add the finely chopped garlic and crushed red pepper flakes. Cook while stirring and scraping up any browned bits from the bottom of the pan, about 30 seconds, until fragrant.
  5. Simmer chicken in sauce: Return the chicken cutlets along with any juices on the plate back to the skillet. Pour the prepared creamy sauce over the chicken. Add the torn fresh basil leaves. Simmer gently, spooning the sauce over the chicken, until the sauce thickens slightly and the chicken is heated through, about 5 to 7 minutes. Taste and season with additional salt and black pepper if needed.
  6. Serve: Divide the chicken cutlets among serving plates. Top each portion with extra grated Parmesan cheese and fresh basil leaves for garnish. Serve immediately.

Notes

  • Press the flour and Italian seasoning onto the chicken so it forms a light crust when seared.
  • Use full-fat cottage cheese and heavy cream for a richer sauce and better texture.
  • If sun-dried tomatoes are packed in oil, drain them before chopping to avoid extra oiliness.
  • Letting the chicken rest after searing helps retain its juices, keeping it moist.
  • Adjust crushed red pepper flakes according to your heat preference.
  • Serve with a side of steamed vegetables or a fresh green salad for a balanced meal.
