For the dough:

  • 1 envelope active dry yeast
  • 2 teaspoons salt
  • 1 ½ cups warm water (110-115°F)
  • 2 tablespoons plus 2 teaspoons olive oil, divided

For the garlic coating:

  • ½ cup (113g) unsalted butter
  • 6 cloves garlic, minced
  • ⅓ cup fresh parsley, minced
  • 1 ½ teaspoons garlic salt or garlic powder
  • ⅓ cup Parmesan cheese, finely grated

Instructions

  1. Prepare the Dough: In the bowl of a stand mixer fitted with a dough hook, combine bread flour, sugar, yeast, and salt. Gently whisk to mix.
  2. With the mixer on low speed, slowly add the warm water and 2 tablespoons of olive oil. Continue mixing until the dough forms a cohesive ball around the hook.
  3. If the dough is too sticky, add additional flour, 1 tablespoon at a time, until it comes together. If it’s too dry, add water, 1 tablespoon at a time.
  4. Transfer the dough to a lightly floured surface and knead it into a smooth, firm ball.
  5. Grease a large bowl with the remaining 2 teaspoons of olive oil. Place the dough in the bowl, cover with plastic wrap, and allow it to rise in a warm place for 90 minutes, or until it doubles in size.
  6. Shape the Knots: Turn the risen dough onto a lightly floured surface and divide it into two equal pieces. Let them rest for 10 minutes under plastic wrap.
  7. Dust the dough lightly with flour and slice each piece into quarters, then halve each quarter, yielding 16 pieces.
  8. Roll each piece into a ball, then shape into a long rope. Tie each rope into a knot.
  9. Arrange the knots on a baking sheet lined with parchment paper, cover loosely with plastic wrap, and let them rise for 30 minutes.
  10. Bake: Preheat the oven to 450°F. Remove the plastic wrap from the knots. Optionally, brush them lightly with garlic butter before baking.
  11. Bake for 20 minutes or until golden brown and firm. Cool for 5 minutes.
  12. Garlic Coating: In a small pan over medium-low heat, melt the butter. Add minced garlic and simmer for 1-2 minutes until fragrant (avoid overcooking).
  13. Stir in parsley and garlic salt, then taste and adjust seasoning as needed. Remove from heat and set aside.
  14. Finish: Brush the warm garlic knots generously with the garlic coating, sprinkle with Parmesan cheese, and serve immediately.
