Ingredients

Scale

Olives and Roasting Mix

  • 2 cups mixed olives, pitted
  • 1/3 cup extra virgin olive oil
  • 6 cloves garlic, smashed
  • 1 shallot, quartered
  • 1 lemon, quartered
  • 2 sprigs fresh thyme
  • 2 sprigs fresh oregano
  • Chili flakes, big pinch

Honey Whipped Feta

  • 1 cup (8 ounces) crumbled feta cheese
  • 3 ounces cream cheese, at room temperature
  • 23 tablespoons honey
  • Black pepper, to taste

Instructions

  1. Preheat and prepare olives: Preheat your oven to 450° F. In a baking dish, combine the mixed olives, extra virgin olive oil, smashed garlic cloves, quartered shallot, quartered lemon, fresh thyme, fresh oregano, and a big pinch of chili flakes. Toss everything together gently.
  2. Roast olives: Place the baking dish in the preheated oven and roast for 20-25 minutes, or until the garlic turns golden and the olive oil is sizzling hot. This roasting infuses the olives with the garlic and herb flavors.
  3. Whip the feta cheese: While the olives roast, combine the crumbled feta cheese, cream cheese at room temperature, honey, and black pepper in a food processor. Pulse until the mixture becomes smooth and creamy. Adjust honey and pepper to taste. This whipped mixture can be refrigerated for up to 3 days.
  4. Assemble and serve: Spoon the honey whipped feta cheese into a serving bowl. Top it immediately with the warm garlic herb roasted olives for the best experience. Serve alongside crusty bread or crackers for a delightful appetizer.

Notes

  • Use a mix of olives such as Kalamata, Castelvetrano, or green Italian for varied flavors.
  • Adjust chili flakes to control heat level.
  • Room temperature cream cheese blends more easily with feta, giving a smoother texture.
  • This dish can be served warm or at room temperature.
  • Leftover whipped feta can be stored in an airtight container in the fridge for up to 3 days.
