Cake and Filling
- 1 box confetti cake mix (can use gluten-free)
- 1/2 cup buttercream frosting
Chocolate Coating and Decoration
- 32 oz bright white melting chocolate
- Unicorn horns (bought from Amazon)
- Chocolate molds
- Food coloring (for different colored flowers)

- Bake the Cake: Preheat the oven and bake the confetti cake according to the box instructions. Use a toothpick inserted into the middle of the cake to check for doneness. Once done, remove from oven and allow to cool at room temperature for 30 minutes.
- Prepare Cake Mixture: In a large bowl, crumble the cooled cake thoroughly. Add 1/2 cup of buttercream frosting and mix with a spatula until combined well, forming a dough-like consistency.
- Chill Cake Mixture: Place the cake and frosting mixture into a ziplock bag and press/smash it together evenly. Refrigerate for at least 30 minutes to firm up the mixture.
- Melt the Chocolate: Melt the bright white chocolate according to package instructions. Spoon approximately 2 tablespoons into each section of the chocolate mold, spreading it evenly to coat the inside of the cavity.
- Insert Popsicle Sticks: Place the popsicle sticks into each mold cavity while the chocolate is still melted. Add an additional chocolate layer if needed to ensure the coating is not transparent and sticks hold well.
- Fill the Molds: Remove the chilled cake mixture from the fridge and firmly press it into each mold cavity, leveling it flush with the top.
- Seal with Chocolate: Spoon melted chocolate over the cake filling to seal it, making sure the chocolate reaches the edges to completely cover the cake inside the mold.
- Chill to Set: Place the molds in the refrigerator and chill for at least 10 minutes or until the chocolate shell hardens completely.
- Remove Cakesicles: Gently remove each cakesicle by carefully pulling back the sides of the mold and popping out the treat without breaking the chocolate coating.
- Decorate: Use chocolate molds to create colorful flower decorations with tinted chocolate. Attach unicorn horns and flowers using melted chocolate as edible glue.
