Dough:
- 3 1/2 cups (450g) bread flour
- 1 1/4 cups (300ml) warm water (about 110°F or 45°C)
- 2 teaspoons active dry yeast
- 2 teaspoons sugar
- 1 1/2 teaspoons salt
- Extra flour for dusting
- Activate the yeast: In a small bowl, combine the warm water, sugar, and yeast. Stir and let sit for 5–10 minutes until the mixture becomes foamy.
- Combine dry ingredients: In a large mixing bowl, stir together bread flour and salt.
- Form the dough: Pour the foamy yeast mixture into the flour mixture. Stir with a wooden spoon or use a dough hook until a shaggy dough forms.
- Knead the dough: On a floured surface, knead for 8–10 minutes until smooth and elastic. You can also use a stand mixer with a dough hook on medium speed.
- First rise: Place the dough in a lightly oiled bowl. Cover with plastic wrap or a clean towel and let it rise in a warm place for 1 to 1.5 hours, or until doubled in size.
- Divide the dough: Punch down the risen dough and divide it into 6 equal portions.
- Shape the baguettes: For each piece, flatten into a rectangle, roll tightly into a log, and pinch the seam closed.
- Second rise: Place the shaped baguettes seam-side down on a parchment-lined baking sheet. Cover and let rise for 30 minutes.
- Preheat the oven to 450°F (230°C). Place an empty metal baking pan on the lower rack of the oven.
