  • 2¼ teaspoons active dry yeast (1 standard packet)

  • 1½ teaspoons salt
  • 1 cup warm water (110 °F)
  • 3 tablespoons olive oil

Herb and Cheese Filling:

  • 4 tablespoons butter, softened
  • 3 cloves garlic, minced
  • 1½ tablespoons dried Italian herb blend (or mix of basil, oregano, rosemary, thyme)
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • ¼ teaspoon red pepper flakes (optional)
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Prepare the Dough: In a large bowl, combine warm water, sugar, and yeast; let sit for about 5 minutes until foamy. Add olive oil, 3 cups flour, and salt; mix until a shaggy dough forms.
  2. Knead the Dough: Turn dough onto a floured surface and knead 6–8 minutes until smooth and elastic, adding remaining flour as needed.
  3. Rise the Dough: Place dough in an oiled bowl, cover with a damp cloth, and let rise in a warm place for about 1 hour, until doubled.
  4. Prepare the Filling: Meanwhile, mix softened butter with garlic, dried herbs, and red pepper flakes (if using).
  5. Assemble the Bread: Punch down dough and roll into a 12×18-inch rectangle. Spread herb butter evenly, then sprinkle with mozzarella, Parmesan, and parsley. Roll tightly into a log and place in a loaf pan.
  6. Final Rise and Bake: Let rise for 30–45 minutes. Preheat oven to 375 °F. Bake the loaf for 30–35 minutes until golden brown and hollow-sounding when tapped.
