Ingredients

Scale

Meat

  • 4 slices thick-cut bacon

Dough

  • 16 oz. pizza dough (homemade or store-bought)
  • 1 Tbsp cornmeal

Cheeses

  • 4 oz. cream cheese (softened)
  • 2 Tbsp grated Parmesan cheese
  • 1½ cups shredded Monterey Jack cheese
  • ½ cup shredded cheddar cheese

Vegetables & Aromatics

  • 2 jalapeno peppers, sliced
  • ¼ cup sliced red onions
  • ½ tsp minced garlic

Seasonings & Oils

  • 1 Tbsp olive oil
  • 1 tsp Italian seasonings
  • ½ tsp kosher salt
  • ¼ tsp garlic powder

Instructions

  1. Preheat and Cook Bacon: Preheat your oven to 460°F. In a large skillet, cook the bacon slices over medium heat until they are crispy. Remove the bacon and place it on paper towels to drain the excess fat, then crumble it into a bowl and set aside.
  2. Prepare the Pizza Dough: Lightly flour a clean surface and roll out the pizza dough into a 16-inch circle. Prepare a piece of parchment paper by dusting it lightly with cornmeal to prevent sticking. Lay the dough onto the prepared parchment paper.
  3. Spread Cream Cheese Layer: Evenly spread the softened cream cheese over the pizza dough, leaving a 1-inch border around the edges to create the crust.
  4. Add Cheeses and Toppings: Sprinkle the Parmesan, Monterey Jack, and cheddar cheeses evenly over the cream cheese layer. Top with the sliced jalapenos, sliced red onions, minced garlic, and the crumbled cooked bacon.
  5. Prepare and Brush the Crust: In a small bowl, mix together the olive oil, Italian seasonings, kosher salt, and garlic powder. Using a brush, coat the 1-inch border of dough (the crust area) with this seasoned olive oil mixture to enhance flavor and aid browning.
  6. Bake the Pizza: Place the parchment paper with the topped pizza on a baking sheet or pizza stone. Bake in the preheated oven at 460°F for 12 to 13 minutes, or until the crust turns golden brown and the cheese is bubbly and melted.

Notes

  • For a milder heat, remove the seeds and membranes from the jalapeno peppers before slicing.
  • You can substitute the Monterey Jack with mozzarella if preferred, though Monterey Jack gives a creamier melt.
  • Using a pizza stone can help achieve a crisper crust.
  • Make sure the cream cheese is softened for easy spreading over the dough.
  • The olive oil seasoning mixture adds extra flavor to the crust but can be adjusted to taste.
