Delicious and buttery jam-filled sandwich cookies, known as Zirochki, are a delightful treat perfect for any occasion.

Dough:

  • 3 cups + 2 tablespoons all-purpose flour
  • 2 sticks (16 tablespoons) unsalted butter, softened to room temperature
  • 2 large eggs, room temperature
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 2 teaspoons white vinegar
  • 2 tablespoons liquid honey

Filling and Finishing:

  • 9 oz jar of your favorite jam or thick preserves (lingonberry recommended)
  • ½ cup powdered sugar

Instructions

  1. Prepare Dough: Combine flour and softened butter. Rub butter into flour until crumbly.
  2. Mix Wet Ingredients: Beat eggs and sugar until pale. Fold into flour mixture.
  3. Add Leavening Agents: Combine baking soda and vinegar, then add to dough with honey. Mix well.
  4. Rest and Preheat: Cover dough and let rest for 30 minutes. Preheat oven to 350˚F.
  5. Roll and Cut Dough: Divide dough, roll out portions, and cut with cookie cutter. Bake cookies for 5-8 minutes.
  6. Fill and Assemble: Spread jam on a whole cookie, sandwich with a cookie that has a hole. Dust with powdered sugar.

Notes

  • You can customize the filling with any jam or preserves you prefer.
  • Ensure cookies are completely cooled before assembling to prevent the jam from melting.
