Dough:
- 3 cups + 2 tablespoons all-purpose flour
- 2 sticks (16 tablespoons) unsalted butter, softened to room temperature
- 2 large eggs, room temperature
- 1 cup granulated sugar
- 1 teaspoon baking soda
- 2 teaspoons white vinegar
- 2 tablespoons liquid honey
Filling and Finishing:
- 9 oz jar of your favorite jam or thick preserves (lingonberry recommended)
- ½ cup powdered sugar
- Prepare Dough: Combine flour and softened butter. Rub butter into flour until crumbly.
- Mix Wet Ingredients: Beat eggs and sugar until pale. Fold into flour mixture.
- Add Leavening Agents: Combine baking soda and vinegar, then add to dough with honey. Mix well.
- Rest and Preheat: Cover dough and let rest for 30 minutes. Preheat oven to 350˚F.
- Roll and Cut Dough: Divide dough, roll out portions, and cut with cookie cutter. Bake cookies for 5-8 minutes.
- Fill and Assemble: Spread jam on a whole cookie, sandwich with a cookie that has a hole. Dust with powdered sugar.
