Instructions

  1. Step 1: In a 3 to 4-quart heavy-bottomed saucepan over medium heat, stir together the granulated sugar, corn syrup, and water until the sugar dissolves completely.
  2. Step 2: Attach a candy thermometer to the side of the pan. Stop stirring and allow the syrup to boil until it reaches the hard ball stage at 260°F.
  3. Step 3: Prepare two teaspoons by spraying with nonstick spray or buttering them, and line two baking sheets with parchment or wax paper.
  4. Step 4: Just before the syrup reaches 260°F, begin whipping the egg whites using a stand mixer on high speed until foamy.
  5. Step 5: Lower the mixer speed to medium-low and slowly add one flavor of jello powder. Increase speed back to high.
  6. Step 6: Remove the syrup from heat and the candy thermometer once it hits 260°F.
  7. Step 7: With the mixer running on high, slowly and carefully drizzle the hot syrup into the jello and egg whites mixture. Continue mixing for 4 to 5 minutes until the mixture loses its shine.
  8. Step 8: Fold in half of the chopped nuts gently.
  9. Step 9: Using the prepared spoons, scoop about 1 to 1½ tablespoons of the divinity, using the second spoon to push it off onto the lined baking sheet.
  10. Step 10: Repeat steps 4 through 9 with the remaining jello flavors and nuts, preparing each batch separately on the second baking sheet.
  11. Step 11: Let the divinity rest for 2 to 4 hours until it becomes dry to the touch.
