For the Syrup
- 2½ cups granulated sugar
- ½ cup light corn syrup
- ½ cup water
For the Meringue Mixture
- 2 large egg whites, at room temperature
- 3 ounces flavored jello (pink, yellow, purple – strawberry, lemon, grape flavors)

- ½ cup pecans, finely chopped (or other nuts of choice)
- Nonstick cooking spray or butter (to grease spoons)
- Parchment paper or wax paper (to line baking sheets)
- Prepare the Sugar Syrup: In a heavy-bottomed 3 to 4-quart saucepan over medium heat, combine granulated sugar, light corn syrup, and water. Stir continuously until the sugar dissolves completely.
- Boil to Hard Ball Stage: Attach a candy thermometer to the saucepan’s side. Stop stirring once the syrup begins to boil. Cook the syrup until it reaches the hard ball stage at 260°F (127°C).
- Prepare Tools: Spray or butter two teaspoons and set aside. Line two baking sheets with parchment or wax paper and set aside.
- Whip Egg Whites: Just before syrup reaches the hard ball stage, start beating egg whites in a stand mixer with a whip attachment on high speed until foamy. If using a handheld mixer, be cautious when adding hot syrup.
- Add Jello Powder: Lower mixer speed to medium-low and slowly incorporate one flavor/color of jello powder. Increase mixer speed back to high.
- Combine Syrup and Egg Whites: Once syrup is ready, remove from heat and thermometer. With the mixer on high, carefully drizzle hot syrup into the jello egg white mixture gradually to avoid cooking the whites.
- Mix Until Matte: Continue whipping on high speed for 4 to 5 minutes or until the mixture loses its shine and thickens.
- Fold in Nuts: Gently fold in the finely chopped pecans or nuts of choice.
- Form Divinity Drops: Quickly use one prepared spoon to scoop 1 to 1½ tablespoons of the divinity mixture and a second spoon to push the mixture off onto the lined baking sheet in small mounds.
- Repeat for Other Flavors: Repeat steps 4 through 9 separately for the other two jello flavors/colors to create three different colors of divinity.
- Allow to Set: Let the divinity pieces rest for 2 to 4 hours at room temperature until dry and firm to the touch before serving or storing.

- Ensure egg whites are at room temperature for better volume when whipped.
- Use a stand mixer if possible for easier and safer incorporation of hot syrup.
