A fresh and vibrant Jennifer Aniston Salad featuring protein-rich quinoa, crunchy pistachios, refreshing herbs, and tangy lemon dressing, perfect for a healthy and flavorful meal.

Ingredients

Scale

Grains and Legumes

  • 1 cup uncooked quinoa
  • 2 cups water
  • 1 15 ounce can chickpeas, drained and rinsed

Vegetables and Herbs

  • 1 cup cucumber, chopped
  • ½ cup parsley, chopped
  • ½ cup mint, chopped
  • ⅓ cup red onion, chopped

Other Ingredients

  • ½ cup roasted and salted pistachios, chopped
  • 2 lemons, juiced (about 56 tablespoons)
  • ¼ cup extra virgin olive oil
  • Sea salt to taste
  • Ground pepper to taste
  • ½ cup crumbled feta cheese

Instructions

  1. Cook quinoa: Rinse and drain the quinoa thoroughly. In a small pot, combine the quinoa with 2 cups of water and bring it to a boil over medium heat.
  2. Simmer quinoa: Reduce the heat to low, cover the pot, and let the quinoa simmer for 15 minutes until all the water is absorbed and the quinoa is tender. Fluff the cooked quinoa with a fork and allow it to cool for 5-10 minutes.
  3. Combine salad ingredients: In a medium bowl, add the cooled quinoa, chopped cucumber, parsley, mint, red onion, pistachios, and chickpeas. Pour in the lemon juice and extra virgin olive oil, then season with sea salt and ground pepper to taste. Gently toss everything together to combine.
  4. Add feta cheese: Fold in the crumbled feta cheese to add a creamy texture and savory flavor.
  5. Chill and serve: You can serve the salad immediately or cover and chill it in the refrigerator for a couple of hours to enhance the flavors.
  6. Store leftovers: Transfer any leftover salad to an airtight container and keep it refrigerated for up to 5 days, making it great for meal prep.

Notes

  • This salad is great served chilled but can also be enjoyed at room temperature.
  • For a vegan option, omit the feta cheese or substitute with a plant-based cheese alternative.
  • If you prefer less tang, reduce the amount of lemon juice to taste.
  • Adding a pinch of red pepper flakes can give the salad a nice kick.
  • Ensure quinoa is well rinsed before cooking to remove its natural bitter coating.
