For the Philly Cheesesteak Peppers:

  • 3 green bell peppers
  • 8 oz button mushrooms
  • 1 cup yellow onion, sliced
  • 12 slices provolone cheese
  • 1 lb shaved beef, stir fry meat, or thinly sliced steak
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 2 teaspoon garlic cloves, minced
  • 1 tablespoon chopped fresh parsley, optional

Instructions

  1. Preheat oven and prep ingredients: Preheat oven to 350°F and position the rack in the center. Slice onions, mushrooms, and halve the peppers, removing seeds and membranes.
  2. Cook vegetables: Heat olive oil in a pan over medium heat. Cook onions, mushrooms, salt, and pepper for about 8 minutes. Set aside.
  3. Cook beef: In the same pan, sauté shaved beef with salt and pepper for 6 minutes. Add minced garlic and cooked vegetable mixture.
  4. Prepare peppers: Place pepper halves in a baking pan, line with provolone, fill with beef mixture, and top with more cheese.
  5. Bake: Cover with foil and bake for 30 minutes, then uncover and bake for an additional 20 minutes until peppers are tender.
  6. Garnish and serve: Optional: garnish with parsley before serving.
