For the Philly Cheesesteak Peppers:
- 3 green bell peppers
- 8 oz button mushrooms
- 1 cup yellow onion, sliced
- 12 slices provolone cheese
- 1 lb shaved beef, stir fry meat, or thinly sliced steak
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
- 2 teaspoon garlic cloves, minced
- 1 tablespoon chopped fresh parsley, optional
- Preheat oven and prep ingredients: Preheat oven to 350°F and position the rack in the center. Slice onions, mushrooms, and halve the peppers, removing seeds and membranes.
- Cook vegetables: Heat olive oil in a pan over medium heat. Cook onions, mushrooms, salt, and pepper for about 8 minutes. Set aside.
- Cook beef: In the same pan, sauté shaved beef with salt and pepper for 6 minutes. Add minced garlic and cooked vegetable mixture.
