Cottage Cheese Mixture:
- 1 cup cottage cheese, 210g – drained for 10 min
- 2 eggs or 3 egg whites
- 1 tsp vanilla extract, 5g
- Zest of 1 lemon (1 tbsp)
- ¼ cup fresh lemon juice, 60g
- ½ cup raw cane sugar, 100g (or any sweetener you like)
Dry Ingredients:
- 1 cup almond flour or oat flour, 100g
- 1 tsp baking powder, 4g
- ½ tsp salt, 3g
Optional Toppings:
- ¼ cup white chocolate, 45g melted and cooled slightly (optional)
- 2 tbsp white chocolate chips, 28g to sprinkle on top (optional)
- Preheat oven: Preheat oven to 350°F (175°C). Grease & line an 8×8-inch pan with parchment paper.
- Melt White Chocolate: Melt ¼ cup of white chocolate in microwave or double boiler. Set aside to cool.
- Prepare Cottage Cheese Mixture: In a blender or food processor, combine cottage cheese, eggs, vanilla, lemon zest, lemon juice, and sweetener. Blend until smooth and creamy.
- Add Dry Ingredients: Add baking powder, salt, and melted white chocolate to the mixture. Blend until fully incorporated.
- Combine Dry and Wet Ingredients: In a medium-sized bowl, mix the flour with the lemon cottage cheese mixture until fully incorporated.
- Assemble and Bake: Pour the batter into the prepared pan. Sprinkle the top with 2 tbsp white chocolate chips. Bake for 22–25 minutes or until set.
- Cool and Serve: Let the bars cool completely before slicing. For a denser texture, chill before serving.
Notes
- If not using chocolate, consider adding 1/2 cup of berries on top before baking.
