These Lemon Cottage Cheese Bars are a delightful and light dessert option that perfectly balances tangy lemon flavors with a creamy cottage cheese base. Easy to make and customizable with optional white chocolate additions or fresh berries, these bars are a perfect treat for any occasion.

Cottage Cheese Mixture:

  • 1 cup cottage cheese, 210g – drained for 10 min
  • 2 eggs or 3 egg whites
  • 1 tsp vanilla extract, 5g
  • Zest of 1 lemon (1 tbsp)
  • ¼ cup fresh lemon juice, 60g
  • ½ cup raw cane sugar, 100g (or any sweetener you like)

Dry Ingredients:

  • 1 cup almond flour or oat flour, 100g
  • 1 tsp baking powder, 4g
  • ½ tsp salt, 3g

Optional Toppings:

  • ¼ cup white chocolate, 45g melted and cooled slightly (optional)
  • 2 tbsp white chocolate chips, 28g to sprinkle on top (optional)

Instructions

  1. Preheat oven: Preheat oven to 350°F (175°C). Grease & line an 8×8-inch pan with parchment paper.
  2. Melt White Chocolate: Melt ¼ cup of white chocolate in microwave or double boiler. Set aside to cool.
  3. Prepare Cottage Cheese Mixture: In a blender or food processor, combine cottage cheese, eggs, vanilla, lemon zest, lemon juice, and sweetener. Blend until smooth and creamy.
  4. Add Dry Ingredients: Add baking powder, salt, and melted white chocolate to the mixture. Blend until fully incorporated.
  5. Combine Dry and Wet Ingredients: In a medium-sized bowl, mix the flour with the lemon cottage cheese mixture until fully incorporated.
  6. Assemble and Bake: Pour the batter into the prepared pan. Sprinkle the top with 2 tbsp white chocolate chips. Bake for 22–25 minutes or until set.
  7. Cool and Serve: Let the bars cool completely before slicing. For a denser texture, chill before serving.

Notes

  • If not using chocolate, consider adding 1/2 cup of berries on top before baking.
