Indulge in the deliciousness of a Low Carb Pizza Casserole that’s loaded with savory Italian sausage, pepperoni, veggies, and gooey cheese. This easy-to-make casserole is a perfect low-carb alternative to traditional pizza.

Cauliflower:

  • 14 ounces Cauliflower florets (cut into bite-size pieces)

Meat and Cheese:

  • 2.5 ounces Pepperoni
  • 2 pounds Italian Sausage (if in casings remove from casing before cooking)
  • 12 ounces Mozzarella cheese (shredded)
  • 1/4 cup Parmesan cheese (powdered)

Vegetables:

  • 1 tablespoon Olive Oil
  • 8 ounces Mushrooms (sliced)
  • 1 Green Pepper (cut into bite-size pieces)

Sauce and Seasoning:

  • 1.5 cups Low Carb Pasta Sauce (we use Rao’s Homemade Marinara)
  • 1 teaspoon Italian Seasoning

Instructions

  1. Steam the cauliflower: Place cut cauliflower in a microwave-safe bowl with 1 cup of water. Microwave on high for about 3 minutes until tender. Drain and pat dry.
  2. Cook Italian sausage: In a skillet, cook sausage over medium-high heat for 15 minutes. Drain fat and set aside.
  3. Saute mushrooms: In the same skillet, saute mushrooms in olive oil for 10 minutes. Set aside.
  4. Preheat oven: Preheat to 400°F.
  5. Prepare casserole dish: Grease dish, spread ½ cup of pasta sauce on the bottom.
  6. Combine ingredients: Mix cauliflower, sausage, mushrooms, and peppers. Spread half in the dish.
  7. Layer toppings: Add sauce, pepperoni, and mozzarella. Repeat layering.
  8. Add Parmesan mixture: Sprinkle Parmesan and Italian seasoning over casserole.
  9. Top with pepperoni: Place remaining pepperoni slices on top.
  10. Bake: Bake for 30 minutes until heated through and cheese melts.
