  • 1 cup bell peppers, diced (mix of red, yellow, and green)
  • 1 cup cheddar cheese, shredded (can use reduced-fat for lower calories)
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Additional Ingredients:

  • 4 large whole wheat tortillas
  • Fresh cilantro, chopped (for garnish)
  • Salsa, for serving

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and spray a large rimmed baking sheet with non-stick spray.
  2. Prepare the Egg Mixture: In a large mixing bowl, whisk together the eggs, egg whites, smoked paprika, garlic powder, salt, and pepper until fully combined.
  3. Add Ingredients: Stir in the crumbled turkey sausage, chopped spinach, diced bell peppers, and half of the shredded cheese into the egg mixture.
  4. Bake the Egg Mixture: Pour the egg mixture onto the prepared baking sheet, spreading it out evenly. Bake in the preheated oven for about 20-25 minutes, or until the eggs are set and lightly golden.
  5. Cool and Slice: Remove the egg mixture from the oven and let it cool for about 5 minutes. Once cooled, cut it into quarters.
  6. Assemble the Burritos: Lay out the whole wheat tortillas and place one quarter of the egg mixture in the center of each tortilla. Sprinkle the remaining cheese on top, and if desired, add some fresh cilantro.
  7. Roll the Burritos: Fold in the edges of the tortillas and roll them up tightly to form burritos.
