Chicken and Coating
- 1–1/4 lbs boneless, skinless chicken thighs
- 1/2 cup gluten free flour
- Salt and pepper, to taste
- 2 Tablespoons extra virgin olive oil
Sauce
- 2 Tablespoons bourbon (Maker’s Mark recommended)
- 1 cup chicken broth
- 1/4 cup chopped pecans
- 3 Tablespoons pure maple syrup (not pancake syrup)
- 1 Tablespoon dijon mustard
- 1 Tablespoon apple cider vinegar
- 2 teaspoons gluten free reduced-sodium Tamari (or soy sauce if not GF)
- 1/4 teaspoon dried rosemary, crushed between fingers
- Season chicken: Combine salt and pepper with gluten free flour in a shallow dish. Dredge each chicken thigh in the flour, shaking off excess, and place on a plate.
- Prepare sauce mixture: In a medium bowl, whisk together chicken broth, pure maple syrup, chopped pecans, dijon mustard, apple cider vinegar, gluten free tamari, and crushed dried rosemary. Set aside.
- Cook chicken: Heat extra virgin olive oil in a 12″ cast iron skillet over medium-high heat. Add chicken thighs and sear until golden brown on one side, approximately 1-2 minutes. Flip and sear the other side until golden brown. Transfer chicken back to the plate. (Chicken is not fully cooked at this point.)
- Add bourbon and sauce: Remove skillet from heat and carefully add the bourbon, allowing it to boil off the residual heat. Return skillet to heat and pour in the maple syrup sauce mixture. Increase heat to bring to a simmer.
- Simmer chicken: Lower heat to medium and nestle the chicken thighs back into the skillet. Loosely cover with foil and simmer for 10 minutes, flipping the chicken once or twice, until the sauce reduces and chicken is cooked through.
- Serve: Plate the chicken thighs and scoop the sauce with pecans over the top. Serve immediately.

- Use pure maple syrup for authentic flavor; pancake syrup won’t work the same.
- Ensure chicken thighs are evenly coated for a nice crust.
- Cook in batches if needed to avoid overcrowding the skillet, which prevents proper searing.
