Instructions

  1. Combine Ingredients: In a bowl, mix together the diced tomato, red onion, spinach, feta cheese, and mozzarella cheese.
  2. Fill Tortillas: Divide the filling equally onto one side of each tortilla. Fold the tortillas in half.
  3. Cook Quesadillas: Heat oil on a pan or griddle over medium heat. Place the tortillas in the pan and cook for 3-4 minutes on each side until browned and cheese is melted, pressing with a spatula.
