  • 1/4 tsp. freshly ground black pepper

  • 4 tbsp. unsalted butter
  • 2 tbsp. extra-virgin olive oil
  • 1 c. low-sodium chicken broth
  • 3 cloves garlic, finely chopped
  • 1 tbsp. fresh rosemary, chopped, plus more for serving
  • 1 tsp. fresh thyme, chopped, plus more for serving

Instructions

  1. Preheat the oven: Heat the oven to 425°F.
  2. Prepare the potatoes: Season the potato slices with salt and pepper in a bowl.
  3. Cook the potatoes: In an ovenproof skillet, melt butter with olive oil, add potatoes, cook until golden brown. Add broth, garlic, rosemary, and thyme.
  4. Bake: Transfer skillet to the oven and bake until potatoes are tender and liquid reduces.
  5. Serve: Place potatoes on a platter, drizzle with pan juices, and garnish with more rosemary and thyme.
