For Spaghetti Squash:

  • 1 large spaghetti squash
  • 1 tbsp olive oil

For Meat Sauce:

  • 1 lb ground beef or Italian sausage
  • 1 cup marinara sauce (sugar-free for keto)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp Italian seasoning
  • Salt & black pepper, to taste

For Cheese Mixture:

  • 1 cup ricotta or cottage cheese
  • ½ cup cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

For Garnish:

  • Fresh basil or parsley, for garnish

Instructions

  1. Prepare the Spaghetti Squash – Preheat oven to 400°F (200°C). Slice the spaghetti squash in half, scoop out the seeds, and drizzle with olive oil. Roast cut-side down for 30-40 minutes. Scrape out the strands with a fork.
  2. Cook the Meat Sauce – Brown ground beef in a skillet. Drain excess grease, then add marinara sauce, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Simmer for 5 minutes.
  3. Mix the Cheeses – Combine ricotta, cream cheese, and half of the mozzarella in a bowl.
  4. Assemble the Casserole – Layer squash, cheese mixture, more squash, meat sauce, and remaining cheeses in a baking dish.
  5. Bake & Serve – Bake for 20 minutes, then broil for a golden top. Garnish with basil or parsley and serve hot.
