For Spaghetti Squash:
1 large spaghetti squash
1 tbsp olive oil
For Meat Sauce:
1 lb ground beef or Italian sausage
1 cup marinara sauce (sugar-free for keto)
½ tsp garlic powder
½ tsp onion powder
½ tsp Italian seasoning
Salt & black pepper, to taste
For Cheese Mixture:
1 cup ricotta or cottage cheese
½ cup cream cheese (softened)
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
For Garnish:
Fresh basil or parsley, for garnish
Instructions
Prepare the Spaghetti Squash – Preheat oven to 400°F (200°C). Slice the spaghetti squash in half, scoop out the seeds, and drizzle with olive oil. Roast cut-side down for 30-40 minutes. Scrape out the strands with a fork.
Cook the Meat Sauce – Brown ground beef in a skillet. Drain excess grease, then add marinara sauce, garlic powder, onion powder, Italian seasoning, salt, and black pepper. Simmer for 5 minutes.
Mix the Cheeses – Combine ricotta, cream cheese, and half of the mozzarella in a bowl.
Assemble the Casserole – Layer squash, cheese mixture, more squash, meat sauce, and remaining cheeses in a baking dish.
Bake & Serve – Bake for 20 minutes, then broil for a golden top. Garnish with basil or parsley and serve hot.
