This Moist and Delicious Pineapple Cake is a tropical delight that’s perfect for any occasion. The combination of crushed pineapple and a sweet glaze makes this cake incredibly moist and flavorful.

Cake:

  • 1/2 cup butter
  • 1 cup white sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1398 mL (14 oz) can crushed pineapple (drained well, set juice aside)
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt

Glaze:

  • 2 tbsp powdered sugar
  • 4 tbsp pineapple juice

Instructions

  1. Preheat your oven to 350 degrees F. Line a loaf pan with parchment paper, then set aside.
  2. Using an electric mixer, cream together the butter and sugar. Add the eggs, one at a time, until the mixture is smooth.
  3. Add the vanilla, mix well. Add the drained crushed pineapple and mix well.
  4. In a separate bowl whisk together the flour, baking soda, and salt. Add the flour mix to the pineapple mix and combine.
  5. Pour the cake batter into a prepared loaf pan.
  6. Bake for 1 hour. The cake will be golden in color, and if you insert a toothpick into the center of the cake, it should come out clean.
  7. While the cake is baking, you can make the glaze. Combine the pineapple juice and powdered sugar. If you want it thicker, add more powdered sugar.
  8. Once the cake has completed baking, remove it from the oven then drizzle it with the glaze.
  9. Let the cake cool for about 15 minutes, then remove it from the pan and place it on a wire cooling rack to cool completely.
  10. Allow the cake to cool for at least 1 hour before serving.
