Cake:
- 1/2 cup butter
- 1 cup white sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1 – 398 mL (14 oz) can crushed pineapple (drained well, set juice aside)
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
Glaze:
- 2 tbsp powdered sugar
- 4 tbsp pineapple juice
- Preheat your oven to 350 degrees F. Line a loaf pan with parchment paper, then set aside.
- Using an electric mixer, cream together the butter and sugar. Add the eggs, one at a time, until the mixture is smooth.
- Add the vanilla, mix well. Add the drained crushed pineapple and mix well.
- In a separate bowl whisk together the flour, baking soda, and salt. Add the flour mix to the pineapple mix and combine.
- Pour the cake batter into a prepared loaf pan.
- Bake for 1 hour. The cake will be golden in color, and if you insert a toothpick into the center of the cake, it should come out clean.
- While the cake is baking, you can make the glaze. Combine the pineapple juice and powdered sugar. If you want it thicker, add more powdered sugar.
- Once the cake has completed baking, remove it from the oven then drizzle it with the glaze.
- Let the cake cool for about 15 minutes, then remove it from the pan and place it on a wire cooling rack to cool completely.
- Allow the cake to cool for at least 1 hour before serving.
