Monster Cookies:

  • 1 1/3 cup White granulated sugar
  • 2 Large eggs
  • 1 Egg yolk
  • 5 TBSP Unsalted butter
  • 1/3 cup Oil (canola or vegetable)
  • 1 tsp Pure vanilla extract
  • 1/2 cup All-purpose flour
  • 3/4 cup Unsweetened cocoa powder (dutch process)
  • 1 TBSP Cornstarch
  • 1/4 tsp Salt
  • 1/2 cup Semi-sweet chocolate chips
  • 1/2 cup Milk chocolate chips
  • 1/2 cup All-purpose flour
  • 1 tsp Cornstarch
  • 1/2 tsp Baking soda
  • 1/8 tsp Baking powder
  • 1/4 tsp Salt
  • 1/4 cup Unsalted butter (room temperature)
  • 1/3 cup Brown sugar (packed light or dark)
  • 1/8 cup White granulated sugar
  • 1/4 cup Peanut butter (creamy)
  • 1 tsp Pure vanilla extract
  • 1 Large egg (room temperature)
  • 1/2 cup Quick oats
  • 1/2 cup Mini chocolate chips
  • 1/2 cup Mini M&M’s

Instructions

  1. Monster Cookies – In a medium-sized mixing bowl, mix together flour, cornstarch, baking soda, baking powder, and salt.
  2. Mix – Using a mixer, beat the butter, brown sugar, and sugar together for 1 minute on medium. Add in the peanut butter and mix for another minute.
  3. Add Vanilla and Egg – Add in the vanilla and egg. Mix until combined. Scrape the bowl and mix again for 20 seconds.
  4. Combine – Slowly add the dry ingredients into the wet ingredients. Once combined, add in oats, M&M’s, and chocolate chips. Cover and chill for 40 minutes.
  5. Brownies – Preheat the oven to 325F. Spray a 9X9 pan with non-stick baking spray. Line the bottom and 2 sides of the pan with parchment paper.
  6. Mix – In a medium bowl, whisk the flour, cocoa powder, cornstarch, and salt.
  7. Beat – Using a mixer, combine sugar, eggs, and egg yolk. Beat for 5 minutes until light and fluffy. Melt the butter while beating.
  8. Mix – Add melted butter, oil, and vanilla. Fold in the dry ingredients, then add chocolate chips.
  9. Combine – Pour the batter in the pan. Top with cookie dough discs and bake.
  10. Bake – Bake for 15 minutes, then add cookie dough discs on top. Bake for another 20 minutes, covering with foil if needed. Bake until set.
  11. Cool – Let cool completely before cutting into squares.

Notes

  • You can customize the toppings by adding nuts or different types of chocolate chips.
  • For a gooey center, slightly underbake the brownies.
  • These brownies are best enjoyed warm with a scoop of vanilla ice cream.
