Ingredients

  • 4 slices bread of choice
  • 6 slices Grilled Chicken (Boar’s Head FireSmith Flame)

Cheese

  • 4 slices smoked Gruyere (thick slices)
  • Gruyere (shredded, to taste)

Condiments and Spread

  • Mayonnaise (to taste)
  • Mustard (to taste)
  • Salsa macha (to taste, optional)

Egg Wash

  • 2 eggs
  • 1 tbsp cream

Cooking Fat

  • 2 tbsp butter (1 tbsp per sandwich)

Instructions

  1. Prepare Egg Wash: Whisk together 2 eggs and 1 tablespoon of cream thoroughly to create an egg wash that will give the sandwich a rich golden crust.
  2. Assemble First Bread Slice: Spread mayonnaise and optionally salsa macha on one slice of bread, then layer it with grilled chicken slices and shredded Gruyere cheese.
  3. Assemble Second Bread Slice: Spread mustard on the other bread slice and then top it with thick slices of smoked Gruyere cheese.
  4. Combine Sandwich: Press the two slices of bread firmly together to ensure the fillings hold well during cooking.
  5. Preheat Pan: Heat a skillet or pan over medium-low heat for about 2 minutes, then add 1 tablespoon of butter per sandwich to the pan.
  6. Dip Sandwich: Quickly dip the assembled sandwich into the egg wash, coating it evenly on each side.
  7. Toast Sandwich: Place the sandwich in the pan and toast on medium-low heat, cooking each side until golden brown and the cheese has melted, about 3-4 minutes per side.
  8. Serve: Remove from pan and enjoy immediately, ideally accompanied with cherry peppers and pickles for added contrast.

Notes

  • Use medium to thick slices of bread sturdy enough to hold the fillings without becoming soggy.
  • Salsa macha is optional but adds a delicious smoky and spicy kick if desired.
  • Maintain medium-low heat during toasting to avoid burning the bread before the cheese melts.
  • Butter adds flavor and helps achieve a crispy crust; do not substitute with oil for best results.
  • Serve immediately after cooking for optimal texture and flavor.
