  • 2 teaspoons grated ginger
  • 1 tablespoon minced garlic
  • 1 tablespoon soy sauce
  • 1 tablespoon Shaoxing wine (or rice vinegar)
  • 1/2 teaspoon sugar

For Cooking

  • 1 tablespoon sesame oil
  • Oil spray for air frying

Optional

  • Sweet chili sauce, peanut sauce, or soy-ginger sauce for dipping

Instructions

  1. Soften Rice Paper: Soak one rice paper sheet in warm water for 10–15 seconds until it becomes soft and pliable.
  2. Prepare Rolling Surface: Transfer the softened sheet to a damp surface such as a wooden board or a clean towel to prevent sticking.
  3. Add Filling: Place a small layer of cooked vermicelli noodles, shredded carrots, chopped cabbage, and either crumbled tofu or cooked shrimp in the center of the sheet. Sprinkle in green onion, grated ginger, minced garlic, soy sauce, Shaoxing wine or rice vinegar, and sugar for flavor.
  4. Roll the Noodle Roll: Fold the sides of the rice paper inwards over the filling, then roll up tightly from the bottom like a burrito to enclose all the ingredients. Repeat this process with the remaining rice paper sheets and filling.
  5. Prepare for Air Frying: Lightly brush or spray each roll with sesame oil or a neutral oil on all sides to help achieve a crispy texture during cooking.
  6. Preheat Air Fryer: Set your air fryer to 375°F (190°C) and allow it to preheat for 2–3 minutes.
  7. Arrange Rolls: Place the rolls in the air fryer basket seam-side down, arranging them in a single layer without overcrowding to ensure even cooking.
  8. Air Fry: Cook the rolls for 8–10 minutes, flipping them halfway through the cooking time, until they turn golden brown and crispy on both sides.
  9. Serve: Remove the crispy noodle rolls from the air fryer and serve hot with your choice of dipping sauce such as sweet chili, peanut, or soy-ginger sauce.
