Ingredients

Scale

For the Batter:

  • 1 stick (8 tablespoons) salted butter, cubed
  • 1 cup all-purpose flour
  • 1 cup light or dark brown sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon kosher salt
  • 1 cup milk
  • 1 tablespoon vanilla

For the Peach Filling:

  • 56 peaches, cut into 8 wedges
  • 2 tablespoons maple syrup
  • 4 tablespoons salted butter
  • 1/4 cup maple syrup

Instructions

  1. Preheat and Melt Butter: Preheat the oven to 375°F. Place the cubed butter in a 9×13 inch baking dish and melt in the preheated oven for about 10 minutes.
  2. Make the Batter: In a mixing bowl, combine flour, 3/4 cup brown sugar, baking powder, cinnamon, and salt. Add milk and vanilla, mix until just combined.
  3. Prepare the Peaches: Toss peach wedges with 1/4 cup brown sugar and maple syrup.
  4. Assemble the Cobbler: Layer half of the peaches over the melted butter, pour the batter over without stirring, then add the remaining peaches on top.
  5. Bake: Bake for 50-55 minutes until the center is set and edges are golden brown.
  6. Make Maple Butter: In a pan, combine butter and maple syrup, boil for 2 minutes, then remove from heat.
  7. Serve: Serve the cobbler warm or at room temperature, drizzled with maple butter and accompanied with ice cream.

Notes

  • You can serve the cobbler with whipped cream or a dollop of yogurt instead of ice cream.
  • Experiment with adding a sprinkle of nutmeg or a dash of almond extract for flavor variations.
