Chicken:
- 1 lb. chicken tenders
- poultry seasoning (cajun seasoning preferred)
Rice:
- 3 tablespoons minced garlic, divided (about 10 cloves)
- 2 tablespoons olive oil
- 1 stick butter, divided (1/2 cup)
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 3/4 cup dry white wine (such as Pinot Grigio)
- 1 1/2 cups white rice, uncooked (basmati, long grain, or jasmine)
- 2 3/4 cups low sodium chicken stock
- 1/2 cup Parmesan cheese, freshly grated or shredded
- 1 tablespoon freshly minced parsley
- Season the chicken: Season chicken tenders. Cook in skillet with olive oil until almost done. Set aside.
- Prepare the garlic butter: Saute garlic in butter, then coat chicken in the garlic butter.
- Make the sauce: Deglaze the pan with wine, reduce, and set aside some pan juices.
- Cook the rice: Pan-fry rice, add stock, salt, and red pepper flakes. Simmer until tender.
