Instructions

  1. Mix the wet ingredients: In a medium bowl, whisk together the egg and sugar until the mixture is smooth and pale. Stir in the melted butter, pandan extract, and coconut milk until well combined.
  2. Add and sift the dry ingredients: Sift the all-purpose flour, baking powder, and cornstarch together. Gradually add this dry mixture to the wet ingredients, mixing gently until the batter is smooth and lump-free.
  3. Preheat the waffle iron: Heat your waffle iron and spray both plates with non-stick cooking spray. Wait until the indicator light signals it’s ready.
  4. Cook the waffles: Pour about 1/2 cup of batter onto the center of the hot waffle iron. Close the lid and cook for approximately 5 minutes, or until the waffles are golden and crisp.
  5. Serve and enjoy: Carefully remove the waffles and serve warm with your favorite toppings such as syrup, fresh fruit, or coconut cream.
