Wet Ingredients
- 1 large egg
- 4 tablespoons sugar
- 1 cup coconut milk
- 1 teaspoon coconut pandan extract
- 1/4 cup unsalted butter, melted
Dry Ingredients
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 tablespoon cornstarch
- Mix the wet ingredients: In a medium bowl, whisk together the egg and sugar until the mixture is smooth and pale. Stir in the melted butter, pandan extract, and coconut milk until well combined.
- Add and sift the dry ingredients: Sift the all-purpose flour, baking powder, and cornstarch together. Gradually add this dry mixture to the wet ingredients, mixing gently until the batter is smooth and lump-free.
- Preheat the waffle iron: Heat your waffle iron and spray both plates with non-stick cooking spray. Wait until the indicator light signals it’s ready.
- Cook the waffles: Pour about 1/2 cup of batter onto the center of the hot waffle iron. Close the lid and cook for approximately 5 minutes, or until the waffles are golden and crisp.
- Serve and enjoy: Carefully remove the waffles and serve warm with your favorite toppings such as syrup, fresh fruit, or coconut cream.
Notes
- Make sure not to overmix the batter to keep the waffles light and fluffy.
- If you don’t have pandan extract, pandan leaves can be blended with coconut milk and strained, but the extract is more convenient.
- The cornstarch helps to create a crispier texture on the waffle exterior.
- For a dairy-free version, replace butter with coconut oil and confirm the coconut milk is suitable for your dietary preference.
- Waffles are best enjoyed fresh but can be kept warm in a low oven for up to 20 minutes.
