Bars:
- 1 cup unsalted butter, softened to room temperature
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon pure vanilla extract
- 1 teaspoon pure almond extract
- 3 cups unbleached all-purpose flour
- 1/2 teaspoon Morton kosher salt
Peach Filling:
- 5 cups peeled and thinly sliced fresh ripe peaches (about 4–5 large peaches)
- 1/4 cup packed brown sugar
- 1 teaspoon cinnamon
- 1 pinch cardamom
Almond Glaze:
- 1 cup powdered sugar
- 3 tablespoons cream
- 1/2 teaspoon pure almond extract
- Preheat oven: Preheat oven to 350°F. Lightly spray a 13″ x 18″ rimmed sheet pan with nonstick baking spray and set aside.
- Prepare Bars: Cream together butter and sugar. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts. Gradually add flour and salt. Spread 3/4 of the dough evenly in the prepared pan.
- Peach Filling: In a bowl, combine peaches, brown sugar, cinnamon, and cardamom. Spread over the dough in the pan.
- Bake: Bake for about 35 minutes, or until golden brown.
- Almond Glaze: In a small bowl, mix powdered sugar, cream, and almond extract until smooth. Drizzle over slightly warm bars.
- Serve: Allow bars to cool completely, then cut into squares and enjoy!
