These Peach Bars are a delightful treat with a buttery base, sweet peach filling, and a drizzle of almond glaze. Perfect for any occasion!

Bars:

  • 1 cup unsalted butter, softened to room temperature
  • 2 cups granulated sugar
  • 4 large eggs
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon pure almond extract
  • 3 cups unbleached all-purpose flour
  • 1/2 teaspoon Morton kosher salt

Peach Filling:

  • 5 cups peeled and thinly sliced fresh ripe peaches (about 45 large peaches)
  • 1/4 cup packed brown sugar
  • 1 teaspoon cinnamon
  • 1 pinch cardamom

Almond Glaze:

  • 1 cup powdered sugar
  • 3 tablespoons cream
  • 1/2 teaspoon pure almond extract

Instructions

  1. Preheat oven: Preheat oven to 350°F. Lightly spray a 13″ x 18″ rimmed sheet pan with nonstick baking spray and set aside.
  2. Prepare Bars: Cream together butter and sugar. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts. Gradually add flour and salt. Spread 3/4 of the dough evenly in the prepared pan.
  3. Peach Filling: In a bowl, combine peaches, brown sugar, cinnamon, and cardamom. Spread over the dough in the pan.
  4. Bake: Bake for about 35 minutes, or until golden brown.
  5. Almond Glaze: In a small bowl, mix powdered sugar, cream, and almond extract until smooth. Drizzle over slightly warm bars.
  6. Serve: Allow bars to cool completely, then cut into squares and enjoy!
