Ingredients

Scale

Rolled Oats:

  • 1 cup

Almond Milk:

  • 2 cups (or any milk of your choice)

Ripe Peaches, diced:

  • 2 peaches

Brown Sugar:

  • 2 tablespoons

Ground Cinnamon:

  • 1 teaspoon (plus extra for garnish)

Vanilla Extract:

  • 1 teaspoon

Chopped Pecans, toasted:

  • 1/4 cup

Salt:

  • Pinch

Instructions

  1. Caramelize Peaches: In a small saucepan over medium heat, combine the diced peaches, brown sugar, and a pinch of salt. Cook for about 5-7 minutes, stirring occasionally, until the peaches are soft and caramelized. Remove from heat and let cool slightly.
  2. Prepare Oat Mixture: In a large mixing bowl, combine the rolled oats, almond milk, ground cinnamon, and vanilla extract. Stir well to ensure that the oats are fully submerged in the liquid.
  3. Layer Ingredients: In a clear glass or jar, add a layer of the oat mixture at the bottom. Follow with a layer of the caramelized peaches, then add another layer of oats. Repeat the process until the glass is filled, finishing with a layer of peaches on top.
  4. Refrigerate Overnight: Cover the glass or jar with a lid or plastic wrap and refrigerate overnight (or at least 4 hours) to allow the oats to absorb the liquid and soften.
