Peach Pie Filling:
- 4 large ripe peaches, diced
- 1/3 cup granulated sugar
- 1/4 cup + 1 tbsp brown sugar, packed
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 tsp vanilla extract
- 1 tsp lemon juice
- 2 tsp corn starch
- 2 tsp water
Cupcakes:
- 5 tbsp salted butter, softened
- 1/4 cup vegetable oil
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 3 large egg whites
- 1 tsp vanilla extract
- 1/3 cup + 1 tbsp full fat sour cream
- 3/4 cup milk
- 1 and 3/4 cups cake flour
- 1 and 1/2 tsp baking powder
- 1/4 + 1/8 tsp baking soda
- 1/4 tsp salt
- 3/4 tsp cinnamon
- 1/4 tsp nutmeg
Frosting:
- 1 and 1/2 cups salted butter, softened
- 8 ounces cream cheese, softened
- 5 and 1/2 to 6 cups powdered sugar
- 2 tbsp heavy cream
- 1/2 tsp cinnamon
- pinch of nutmeg
- 2 tsp vanilla extract
- pinch of salt
- Make the Peach Pie Filling: Cook peaches, sugars, lemon juice, vanilla, cinnamon, and nutmeg in a saucepan. Stir in corn starch mixture. Cool in the fridge.
- Make the Cupcakes: Cream butter, oil, sugars, egg whites, vanilla, sour cream. Add dry ingredients and milk. Bake.
- Bake: Fill cupcake tins, bake until set. Cool.
- Make the Frosting: Cream butter, add powdered sugar, heavy cream, vanilla, spices, and cream cheese. Adjust to taste.
- Assemble the Cupcakes: Fill cupcakes with peach pie filling, frost, and decorate as desired.
- Serve & Store: Enjoy immediately or store leftovers in the fridge for 4-5 days. Let sit out before serving.
