Instructions

  1. Prepare the baking dish: Line the bottom and all 4 sides of an 8-inch square baking dish with aluminum foil, then lightly coat with cooking spray. Alternatively, you can line with two sheets of parchment paper placed perpendicular to each other so all four sides are covered and the paper extends over the edges by a few inches. Use some cooking spray to hold the parchment in place if needed.
  2. Melt the peanut butter and butter: Place the peanut butter, butter, and kosher salt in a large, wide saucepan. Cook over medium-low heat, stirring frequently for 3 to 5 minutes until the butter is melted and the mixture is smooth. Remove from heat and stir in vanilla extract.
  3. Incorporate powdered sugar: Sift powdered sugar into the melted butter and peanut butter mixture. Stir thoroughly using a stiff spatula or whisk to work out any lumps, until the texture is smooth, combined, and slightly thickened. Tiny specks of sugar may remain but aim for a smooth consistency.
  4. Transfer and chill: Pour the fudge mixture into the prepared baking dish and spread it evenly with a metal or small offset spatula. Cover the dish without letting the cover touch the fudge surface and refrigerate for at least 3 hours or overnight until firm enough to slice.
  5. Slice and serve: Lift the fudge slab out of the dish using the excess parchment or foil. Let it sit at room temperature for 5 to 10 minutes to warm slightly and prevent crumbling, then cut into 36 pieces with a long knife.
