Mustard Dipping Sauce

  • 1/2 cup light mayo
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp dijon mustard

Vegetables

  • 1 tbsp olive oil
  • 1 carrot, thinly sliced
  • 1 cup mushrooms, sliced in half
  • 1 yellow onion, chopped
  • 1 zucchini, chopped
  • 1 tbsp soy sauce
  • Salt & pepper, to taste

Fried Rice

  • 2 cups cooked white rice
  • 2 tbsp butter
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 egg
  • 4 green onions, sliced

Instructions

  1. Marinate and cook chicken: In a small bowl, combine the sesame oil, soy sauce, hoisin sauce, minced garlic, and minced ginger to create the marinade. Pour the marinade over the diced chicken breasts and toss to coat evenly. Heat a large skillet over medium-high heat, then add the chicken with the marinade. Cook for about 10 minutes, stirring occasionally, until the chicken is fully cooked through. Remove chicken from the pan and wipe the pan clean.
  2. Prepare rice and sauce: While the chicken cooks, prepare your rice either in a rice cooker or on the stovetop following package instructions. Alternatively, pre-cooked rice can be used up to 2 days in advance. Simultaneously, mix together the light mayo, soy sauce, rice vinegar, and dijon mustard in a bowl to make the mustard dipping sauce. Set aside.
  3. Sauté vegetables: Heat olive oil in the same clean skillet over medium heat. Add the sliced carrot, halved mushrooms, chopped onion, and chopped zucchini.
