Wonton Wrappers:

  • 15 wonton wrappers

Ricotta Filling:

  • 15 ounces ricotta cheese (drained of excess liquid overnight if possible)
  • 1/3 cup plain Greek yogurt (low fat or whole can also be used)
  • 1 teaspoon orange zest
  • 1/4 teaspoon ground cinnamon
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract (optional)

Toppings:

  • Mini chocolate chips
  • Chopped pistachios

Instructions

  1. Preheat Oven: Preheat oven to 350°F and spray a muffin pan with cooking spray. Place one wonton wrapper in each muffin cup and bake for 7-10 minutes or until lightly browned. Remove from oven and cool completely on a wire cooling rack.
  2. Prepare Filling: In a medium-sized bowl or in the bowl of an electric mixer, whisk together all of the filling ingredients except the chocolate chips and pistachios.
  3. Fill Cups: Divide the filling into the cooled wonton cups. Top with mini chocolate chips and chopped pistachios.
