  • 1/2 medium yellow onion, minced
  • 8 large eggs
  • 1/4 cup sour cream, plus more for garnish
  • 1 1/2 cups sour cream & onion chips, plus more for garnish
  • 2 Tbsp. freshly chopped chives, plus more for garnish
  • Kosher salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Caramelize the Onions: Preheat your oven to 375°F (190°C). Heat the olive oil in a medium oven-safe skillet over medium heat. Add the minced yellow onion and cook, stirring occasionally, until the onions are golden and caramelized, about 20 to 25 minutes. This slow cooking releases the natural sweetness and creates a rich flavor base.
  2. Prepare the Egg Mixture: While the onions cook, whisk together the eggs and 1/4 cup sour cream in a large bowl. Stir in 1 1/2 cups of sour cream & onion chips and 2 tablespoons of chopped fresh chives. Let this mixture sit for 10 minutes to allow the chips to soften slightly. Season the mixture with kosher salt and freshly ground black pepper to taste.
  3. Combine and Distribute: Once the onions are caramelized, pour the egg and chip mixture into the skillet over the onions. Stir gently to distribute the potato chips evenly throughout the eggs, ensuring every bite will have that signature crunch.
  4. Bake the Frittata: Transfer the skillet to the preheated oven. Bake the frittata until the eggs are just set but still tender, about 10 to 12 minutes. The edges should be slightly puffed and golden while the center is cooked through but moist.
