Ingredients

Scale

Wet Ingredients

  • ¼ cup (56g) plain nonfat Greek yogurt (or use vanilla Greek yogurt for added sweetness)
  • ½ cup (120g) unsweetened vanilla almond milk (or any milk of choice)
  • ¼ cup (61g) pumpkin puree
  • 12 tablespoons pure maple syrup
  • ½ teaspoon vanilla extract

Dry Ingredients

  • ½ cup (48g) rolled oats (gluten free if desired)
  • 2 teaspoons chia seeds
  • ½ teaspoon pumpkin pie spice

Instructions

  1. Combine Wet Ingredients: In a medium bowl, mix together the Greek yogurt, unsweetened vanilla almond milk, pumpkin puree, vanilla extract, and 1 tablespoon of maple syrup until all ingredients are well combined and smooth.
  2. Add Dry Ingredients: Stir in the rolled oats, chia seeds, and pumpkin pie spice into the wet mixture. Make sure the oats and chia seeds are evenly distributed.
  3. Sweeten to Taste: Taste the mixture and add more maple syrup if you prefer a sweeter flavor. Mix thoroughly.
  4. Refrigerate Overnight: Pour the mixture into a glass jar or container with a lid. Seal and place it in the refrigerator for at least 4 hours or overnight to allow the oats and chia seeds to absorb the liquid and flavors.
  5. Serve: In the morning, give the oats a good stir and enjoy cold, or warm them up if preferred. Optionally, top with nuts, seeds, or extra pumpkin pie spice.

Notes

  • Use gluten-free rolled oats if you need a gluten-free option.
  • Vanilla Greek yogurt can be used for added natural sweetness.
  • Adjust maple syrup based on your desired sweetness level.
  • Can be prepared up to 3 days in advance and stored in the refrigerator.
  • Add toppings like chopped nuts, dried cranberries, or a dollop of nut butter for extra texture and flavor.
