Ingredients

Scale

Liquid Base

  • 2 cups water

Sweeteners

  • 1 1/2 cups granulated sugar
  • 1/2 cup packed brown sugar

Spices

  • 1 teaspoon ground cinnamon or 4-5 cinnamon sticks (or a mix of half cinnamon powder and half cinnamon sticks)
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground cloves (use sparingly)

Flavor

  • 4 heaping tablespoons pumpkin puree

Instructions

  1. Combine Ingredients: In a pot, combine water, granulated sugar, brown sugar, cinnamon (powder and/or sticks), nutmeg, ginger, cloves, and pumpkin puree. Stir well to mix all ingredients evenly.
  2. Heat Mixture: Place the pot over medium heat and stir until the sugars have fully dissolved, which helps to avoid graininess in the syrup.
  3. Simmer: Reduce the heat to low or medium-low and continue cooking the mixture for an additional 5 to 6 minutes, being careful not to let the syrup boil as it can affect the texture and flavor.
  4. Strain Syrup: Remove the pot from heat and strain the syrup through a fine mesh strainer to remove cinnamon sticks and any solids, ensuring a smooth syrup.
  5. Store: Pour the strained syrup into an airtight container and refrigerate. The syrup can be kept fresh for up to two weeks.
  6. Shake and Use: Before each use, give the syrup a good shake to recombine any separated ingredients. Use it to sweeten coffee, lattes, or hot milk for a delicious seasonal treat.

Notes

  • Do not boil the syrup to avoid altering its consistency and flavor.
  • The syrup keeps well in the refrigerator for up to two weeks when stored in an airtight container.
  • Adjust the amount of cloves according to your taste preference as it is a very strong spice.
  • For a stronger cinnamon flavor, use cinnamon sticks instead of or in addition to ground cinnamon.
  • The syrup can be used as a sweetener and flavor enhancer for different beverages and desserts, not just coffee.
